I don't think so; my first book will likely not involve a lot of "modern" techniques. But maybe someday I'll get do a vegetarian cookbook with those ideas.

You definitely can leave out the rum, but this infusion technique (using the cream whipper) works more efficiently with alcohol than H20. (More about the technique at http://www.herbivoracious.com/2010/09/compressed-cucumber-shiso-sake-infusion.html)
