Intriguing composition! I never thought of using masa in a tempura batter- sounds crunchy and flavorful.

The masa brings an interesting flavor component, but not much crunch...I used about 20% masa...Anchovies in the stuffing is fantastic...Used to make with ricotta, but now I just use a half salt-cured anchovy...pure flavor which really impacts the whole composition...
