melt butter sauté carrots, onion, and celery and saute Add chestnuts
Add stock. Simmer add apple juice, parsley, nutmeg, salt and pepper. Simmer. Add tarragon. blend. reheat. Adjust seasonings Serve with a dollop of sour cream.
